Tacos with potatoes, chorizo sausage and yellow zucchini topcook.tomathouse.com
Ingredients:
- 2 medium red potatoes, peeled and cut into 2.5cm cubes
- 1 medium yellow zucchini, diced
- Salt and freshly ground pepper
- 230 gr. chorizo or other spicy sausage
- 2 medium-sized tomatoes, diced
- 1 jalapeño pepper, seeded and chopped
- 1/4 tbsp. cotija cheese or cheese feta
- 1 green onion, cut into rings
- 8 corn tortillas (recipe corn tortillas, recipe wheat tortillas)
- 2 tablespoons of vegetable oil
- 1/3 cup cilantro, chopped
- Salsa sauce for serving (For the salsa recipe, see here.)
- Sour cream and/or avocado guacamole, for serving

Preparation:
- Place the potatoes in a microwave-safe bowl, add 1/2 cup water, and season with salt. Cover and microwave for 5 minutes.
- Meanwhile, heat vegetable oil in a shallow frying pan, add the zucchini, and fry over high heat until crisp, 3-4 minutes. Season with salt and pepper and transfer to a separate bowl.
- Add the sausage to the same pan and lightly fry, breaking it up with a spatula, for 3-4 minutes. Add the potatoes with the cooking liquid and simmer until the sausage is cooked through, another 5-6 minutes. Season with salt.
- Mix tomatoes in a bowl, green onions, jalapeno pepper and cilantro, add salt.
- Heat a shallow frying pan and warm the tortillas on both sides without adding oil, or wrap in a damp towel and warm in the microwave for about 1 minute.
- Place zucchini and chorizo-potato mixture on tortillas, sprinkle with cheese, and garnish with salsa. Top with sour cream.
